DIY: Peanut Butter Swirl Brownies (Gluten-Free/Dairy-Free!)

Usually when I post recipes, they are sparked from an idea I found online. I tweak it, modify it, and add and subtract components to make it my own, then share it with you guys! The following recipe, I cannot take credit for, though I wish to hell I had thought of it!

Peanut Butter Swirl Brownies

The Minimalist Baker has some awesome recipes. But these. THESE ARE RIDICULOUS. Secret ingredient of this recipe? Black. Beans. Black beans. I say again. Black beans. There is no flour here. Only gooey delicious gooey goodness. And trust me. You will have no idea they’re made from beans.

25swf knows much about my love for brownies. It is something we share. At one time, we were brownie connoisseurs  - we knew exactly which pre-made mix to buy at the store. It came with this extra packet of chocolate syrup that you would squish into the batter before baking, giving the brownies this super gooey, but fully cooked flavorful mess of chocolate. Add some milk (for 25swf) and some fake milk (for yours truly). I’m telling you this, so you’ll trust me. I have high, HIGH expectations out of brownies. And I need to tell you.

These blow that delicious, gooey, pre-made mix out of the water.

They’re gluten-free.

They’re dairy-free.

They’re EGG FREE (if you want – I used eggs).

If you don’t eat peanut butter, sub ANY OTHER NUT BUTTER.

They’re GOOEY, even fully cooked.

      YES!!! I have been trying to spread the gospel of these brownies. Make sure you mix everything really well! I think she uses a food processor in the recipe – I don’t have that, so I mixed by hand. It was fine, you just have to make sure you combine the ingredients super well!
      Also, with the black beans, I put half in my little baby smoothie maker along with one egg and blended, then dumped it out. Then repeated with the other half of the beans and the second egg. It worked just fine!
